How to Make It

Toast almonds

Dry pan over medium heat 3–4 minutes, stirring, until fragrant and light gold. Cool. Do not walk away.

Make poppy seed dressing

Whisk olive oil, apple cider vinegar, honey, Dijon mustard, poppy seeds, salt. Should be slightly sweet and tangy.

Prep berries

Hull strawberries and slice vertically into fans. This maximises their visual impact and dressing surface area.

Assemble gently

Layer spinach, berries, onion, and blueberries. Crumble goat cheese over top. Scatter almonds. Dress at the table.
